The main objective of this master thesis is establishing technology efficiency and quality of work of the equipment extruder Shaaf. Based on the explorations which are shown in this work it can be concluded: a) increasing the moisture of raw material for production of flips leads to: increase in moisture in extruded product, increase of fat, minerals and cellulose. Starch content rises in the beginning with the increase in moisture in raw material for extrusion, with further increase in moisture in extruded starch content decreases at the exist of extruder. When the moisture in raw material starts to increase, the content of proteins decreases, then slowly increases and after the slight increase of moisture the percentage of proteins in extruded product increasesb) with the increase of the number of screw rotations of extruder the content of proteins in extruded product rises while the content of moisture, fat, minerals, cellulose and starch decreasec) with the increase of the flow of raw material, the content of moisture, fat and starch increase while the content of proteins, cellulose and minerals decrease.
