Influence of three-race crossing [pigs] and season on quality of carcass and pork

Applying parcial dissection higher meat yield (P is greater than 0.05) was found in halves of three-race pig hybrids Hx(LYxSL) compared to Dx(LYxSL)in all seasons. The highest meat yield was in spring (57.04%)in hybrid Hx(LYxSL), e.g. the lowest in winter 54.32% in hybrid Dx(LYxSL). The highest frequency of PSE meat determined on Musculus semimembranosus (SM) of both genotypes, was found in spring (31.25%). The highest protein content of SM was found in SM of Hx(LYxSL) hybrids in spring (22.57%) and very low fat content (0.65%) in winter.
