Application of response surface methodology for optimization of enzymatic maceration of pumpkin seed

The aim of this study was the testing of specific enzymes preparation for solubilization of cell wall compounds of pumpkin oil seeds and defining of math model for these processes. The individual effect of two different enzyme complexes: cellulase, pectinase, and their mixture on degradation of pumpkin seed cell wall, combined with other process parameters, concentration of enzymes and time of hydrolysis were evaluated by Response Surface Methodology. Experimental data for both parameters (reducing sugar and protein) correlated very well with the process parameters and made possible to predicte the reaction flow. There is a good agreement between experimental results and values obtained by the use of the math model, with high correlation coefficients.
