Food quality as a factor of concurence

The composition of food products can include different substances, added to imporove some characteristics or preserve the quality. The analysis of composition includes quality parameters from the technological, chemical, nutritional, microbiological and sensory aspect, during the production process, as well as during distribution and sale. Market-consumer factors are a specific group of food quality parameters. These factors are not representing the essence of food quality, however, their affect may be indirect (incoming price of raw materials or material, energents, tax and other duties...).
