Determination of vitamin C in quarg using high performance liquid chromatography

In this paper the percentage of vitamin C in different quarg samples, produced with probiotic and usual starter cultures, using reversed phase high performance liquid chromatography (HPLC) with UV-DAD detection has been researched. Vitamin C was extracted with meta-phosphoric acid and extract clarified and prepared for HPLC analysis by raw and fine filtration. Extraction method with meta-phosphoric acid proved to be very suitable, simple and fast. The lowest vitamin C content was 100 microgram/100 g in quarg produced using usual starter culture (Flora Danica), and the highest was measured in quarg obtained using probiotic ABT1, 455 microgram/100 g.
