Mass and energy balance of apricot drying was evaluated in this paper. Apricot varieties as Novosadska Rodna, Ambrosija, Keckemetska Ruza and Ananaskij were analyzed. The mass balance approved that 100 kg of fresh fruit can turned into approximately 20 kg of dried halves and smaller peaces for mixed bars. In order to produce one kilo of dried apricot about 21 MJ of energy is necessary. So, it was suggested by authors that renewable energy sources are suitable for such kind of drying. In that case the existence of dried apricot is possible in Serbia.
