The methanol, petroleum ether, chloroform, ethyl acetate, n-butanol and water extracts were obtained by extraction of wormwood (Artemisia absinthium L.). The influence of these extracts on peroxidation of linoleic acid, in presence of azo-initiator, AAPH, and thermal (60 deg C, 24 h) and catalytic (ferrous ions, 23 deg C, 24 h) oxidation of sunflower oil was investigated by ESR spectroscopy - spin trapping method. Analyzing the ESR spectra, it can be concluded that all investigated extracts was effective on the formation and stabilization of peroxyl radicals in all three investigated systems. All extracts showed antioxidative activity. Antioxidative activity of ethyl acetate, n-butanol, methanol and water extract is stronger than antioxidative activity of synthetic antioxidants butylated hydroxyanisole (BHA) and butylated hydroxytoluene (BHT). Ethyl acetate and n-butanol extracts possess stronger antioxidative activity than tocopheryl acetate (TA).
