Dispersion and rheological properties of emulsions with hydrocolloids

Solutions of various emulsifiers and viscofiers of hydrocolloid origin were used as continuous phase in preparation of sunflower oil in water emulsions. Oil globule size and size frequency distribution and internal structure of the emulsions stabilized by selected emulsifiers and their mixtures were examined. Rheological behaviour of continuous phases and the emulsions were examined, too. Flow type and some of the rheological characteristics were determined. Changes in the dispersion and rheological characteristics during the emulsion homogenization were followed, too.
