Technological convenience of goat milk for processing

Characteristics that separate goat milk from milk of other dairy animals are organoleptic properties (especially expressed in cheeses), higher transformation ratio of its constituents, chemical composition and hygienic quality. Basic parameters of production, quality and applicable value of goat milk are showed in this paper.
