The paper presents the current state and the future of both storing and technology of fruit processing. It includes modern methods for determination of appropriate harvest time and suggests the necessity of application of treatments in post-harvest period aimed at obtaining better results during the storage. New storing technologies, that ensure maintenance of quality of fruits, which primarily refers to their firmness and soluble solids content, and also provide subsequent development of typical aroma, have been particularly emphasized. The paper prOvides a survey of problems related to the harvest and post-harvest treatment aimed at control of non-parasitic diseases. It also presents the current assortment of fruit products offered by our processing industry, suggesting modern technologies and methods of fruit processing.
