Extracts obtained by ultrasonic extraction from plant and residual materials, as well as the essential oil from Salvia officinalis L., acted antimicrobially against all examined bacteria. As the main result, it was proved that the ultrasonic extraction occurred via the same mechanisms as the classical extraction of bioactive substances from plant materials (maceration) did. The possibility of using residual plant materials after hydrodistillation of the essential oil from both plants as sources of valuable bioactive substances was verified. This represented an important result from the economic point of view. The optimum extraction conditions for isolating extractive substances from the plant materials used in the study were defined. The study showed that the composition of the extracts depended on both the extraction conditions applied and the plant material. All typical components are isolated from both Salvia officinalis and Salvia glutinosa by 70% ethanol, which was the optimum extracting solvent, in higher levels using the ultrasonic extraction than using the classical maceration.
