Place and role of the buffalo's milk in the nutritional regime of the Bulgarians

The authors summarize the existing scientific facts on the content, nutritional and biological value of buffalo's milk and its specific psychological effect on the human organism. Particular attention is focused on the unique properties of buffalo's milk in relation with its resistance to the contemporary disease known as 'mad cow'. It is also regarded as a strategic food product under the conditions. Additionally, the present study includes investigations conducted by our scientists proving the resistance of the buffalo's milk to radiation influece, compared to that of for buffalo's milk quality and safety. In this aspect, the perspective of the buffalo breeding for our country within the EU is presented until the year of 2015.
