Now in the world (it is especially in the advanced countries) requirements to food safety, first of all to biological safety, are toughened. According to data of the International Epizootic Bureau, food continues to be considered as the major factor of distribution of infectious person and animal diseases. For today it is known more such 200 diseases. Their occurrence is always fraught with serious consequences for national economy, and sometimes and for national safety. One of necessary conditions of maintenance of safe food production is the state control, is especial at export-import transactions. It is necessary for carrying out within the framework of the norms accepted in the world and rules. In this connection quality and safety of production of animal origin should not be a screen for settlement of interstate relations, and veterinary service - the tool at their sanction. The purposes and problems of this service are more humane and are significant, than it is represented
