Possibility of citric acid production by post-harvest wastes of date fruit (c.v. Sayer) using submerged culture

Citric acid is one of the most important organic acids in food industries. On the other hand wastes of date fruits are high in Iran that can be used to increase added-value by-products like citric acid. The objective of this study was to investigate of the possibility of citric acid production by post-harvest wastes of the most commercial date fruit in Khouzestan province (Sayer cultivar) using submerged culture and Aspergillus niger BC1. This research was carried out using Taguchi method and Compeletly Randomized Design (CRD), five treatmens i.e. total sugar amount of date extract, inoculum size, fermentation period, methanol, agitation rate and three replications. Total sugar and produced citric acid were measured using Lane–Eynon and Marrier- Boulet methods in date palm and tropical fruits research institute of Iran. pH and temperature were at stable for all experiments. The final results of analytical studies showed that the highest amount of citric acid was produced by 20% total sugar amount of date extract, 107 spores/ 1 ml of inoculum size, 9 days fermentation peroid, 2% methanol and 100 rpm agitation rate.
