Theoretical and experimental study of steam and gas ejectors [food industry]

English. Steam and gas jet ejectors are an essential part in concentration, desalinization, refrigeration and vacuum production of food industries and not only. The ejector theory saw the contribution of many AA in the time; among them stand out Munday and Bagster. But many experimental studies showed this theory too optimist. In this work, some changes to the theory concerning the diffusion phenomena were proposed. Furthermore, a modification of momentum equation and energy equation was proposed, to consider the primary and aspirated gas as different fluids. To evaluate the modified theory, an experimental ejector was assembled and tested and, in comparison with Munday and Bagster theory, the improvement was estimated. In addition, the two mathematical models were compared with further experimental data from scientific literature. The values of the average error between the calculated and experimental ejection coefficient were 42.2% and -3.9% for the old and modified theory, respectively

[Gli eiettori a vapore e a gas sono una componente essenziale nelle fasi di concentrazione, desalinizzazione, refrigerazione e produzione del vuoto nelle industrie alimentari e non solo. La teoria degli eiettori ha visto, nel tempo, contributi da parte di diversi AA; fra questi sono da menzionare Munday e Bagster. Ma molti studi sperimentali hanno dimostrato che questa teoria era troppo ottimistica. In questo lavoro sono stati proposti alcuni cambiamenti della teoria concernente i fenomeni di diffusione. Inoltre, è stata proposta una modifica dell'equazione del momento e dell'equazione dell'energia, per considerare il gas primario e il gas aspirato come fluidi diversi. Per valutare la teoria modificata, è stato assemblato e provato un eiettore sperimentale ed è stato stimato il miglioramento in confronto alla teoria di Munday e Bagster. I due modelli matematici sono stati pure confrontati con ulteriori dati sperimentali derivati dalla letteratura scientifica. I valori dell'errore medio fra il coefficiente di eiezione calcolato e sperimentale sono risultati del 42,2% e del -3,9% per la teoria vecchia e per quella modificata, rispettivamente.]
