Valorisation of Ravanello lungo Torino and cavolfiore of Moncalieri two old Brassicaceae varieties [Raphanus sativus L.; Brassica oleracea L. var. botrytis L.; Piedmont]

In the Piedmont region, the Turin Province has undertaken a development project for recovery of local products through the creation of the Basket of the Typical Products, that includes different foodstuffs of local origin. Among these products, radish Ravanello lungo Torino (Long radish of Turin) and cauliflower Cavolfiore di Moncalieri (Cauliflower of Moncalieri) represent two typical local vegetable cultivars of Turin area. The Long radish of Turin is a variety with a cylindrical red root of good taste and it is perfectly suited for high quality production all around the year. The Cauliflower of Moncalieri has an inflorescence with a more ivory colour than commercial hybrids: it seems that consumers do not like this characteristic, generally associated to the lack of quality. The consumer opinion that the radish has to be round and that the cauliflower has to be white represents a weakness for marketing strategies. The cultivated surface area drastically decreased in the last 40 years for both vegetables. Investigations on organoleptic and botanical characteristics, cultural techniques and the historical origin and food uses have improved the diffusion of the knowledge of these vegetables and provided the tools to appraise their quality

[La Provincia di Torino ha intrapreso un progetto di sviluppo per il recupero di prodotti alimentari locali attraverso la creazione del Paniere dei Prodotti Tipici della provincia, che comprende tipologie agroalimentari di eccellenza presenti sul territorio. Fra questi prodotti sono compresi il Ravanello lungo Torino e il Cavolfiore di Moncalieri, varietà locali tipiche dell'area torinese. Il Ravanello lungo Torino è una varietà con ipocotile lungo dal colore interamente rosso, di sapore gradevole e adatto a una produzione di qualità durante tutto l'anno. Il Cavolfiore di Moncalieri presenta un'infiorescenza a cupola con un colore tendente all'avorio in misura maggiore rispetto agli ibridi commerciali; pare che i consumatori non gradiscano questa caratteristica, generalmente associata a mancanza di qualità: l'opinione del consumatore che il ravanello deve essere tondo e il cavolfiore deve essere bianco rappresenta un punto di debolezza per le strategie di commercializzazione. La superficie coltivata con questi ortaggi è diminuita drasticamente negli ultimi 40 anni. La ricerca delle caratteristiche botaniche e organolettiche, delle tecniche colturali e della storia ha favorito la conoscenza di questi ortaggi e fornito gli strumenti necessari per valutarne la qualità.]
