Ready-to-eat garden cress: soilless culture system and post-harvest [Lepidium sativum L.]

The floating system allows to obtain clean leafy vegetables at harvest suitable for the fresh-cut market, characterized by hygienic and commercial qualities optimal for processing and with low nitrate content. The floating system was employed to produce garden cress (Lepidium sativum L.) applying three nitrogen levels in the nutrient solution (8, 12, 16 mmol lE-1) and three NO3/NH4 ratios (25/75, 50/50, 75/25) in two different experiments. At harvest, plants were packed in plastic bags with either high or low permeability to O2 (1,600 e 800 cube cm mE-2 d); shelf-life was assessed in cells with controlled temperature (4, 8, 16 deg C). The highest leaf production was obtained when the highest N level was used in the nutrient solution. Leaf nitrate content increased increasing N supply and when NO3/NH4 ratios were 50/50 and 75/25 in the nutrient solution. After 8 days of storage, the weight loss increased with temperature increase, never reaching 2%. The higher permeable film caused a weight loss increase of 0.3%. High quality garden cress for the fresh-cut market was cultivated with success with the floating system

[Il floating system (FS), un sistema di coltivazione fuori suolo, è stato utilizzato per la produzione di crescione per l'utilizzo nella IV gamma, poiché permette di ottenere un prodotto pulito alla raccolta. Questo sistema è stato utilizzato per produrre il crescione (Lepidium sativum L.) adottando, nella soluzione nutritiva, tre livelli di N (8, 12, 16 mmol lE-1) e tre rapporti NO3/NH4 (25/75, 50/50, 75/25) in due esperimenti diversi. Alla raccolta, le piante sono state confezionate in buste di plastica ad alta o bassa permeabilità all'O2 (1.600 e 800 cm cubi mE-2 g); la shelf-life è stata accertata in celle a temperatura controllata (4, 8, 16 gradi C). La produzione più elevata di foglie è stata ottenuta con il livello massimo di N nella soluzione nutritiva. Il contenuto di nitrati delle foglie è cresciuto all'aumentare della disponibilità di N e quando i rapporti NO3/NH4 erano 50/50 e 75/25. Dopo 8 giorni di conservazione, la perdita di peso è aumentata all'aumentare della temperatura, non raggiungendo mai il 2%. Il film a maggiore permeabilità ai gas ha causato un aumento della perdita di peso pari allo 0,3%. Il FS si è rivelato un sistema efficace per produrre crescione di qualità e commerciabile come prodotto di IV gamma.]
