To manage the reconstruction of sugar refineries for bioethanol/sugar production with least investments, the ethanol production unit should be installed, and an appropriate raw material from the semi-products of sugar beet processing chosen. Sugar beet extraction juice, purified syrup and molasses were used as the main component of the raw material for ethanol fermentation by Saccharomyces cerevisiae. FT-IR spectra showed a similar bio-chemical composition of the raw materials, although the highest concentration of betaine was identified in the extraction juice. The concentration of sugars in the extraction juice was comparatively low (11.33%). The highest ethanol concentration (6.22%) and the yield of ethanol from assimilated sugars (59.8%) were reached using the sugar beet extraction juice medium. The juice medium enriched with syrup sugars (up to 16%) ensured the ethanol concentration up to 9.2% and the system's productivity 1.79 g/L h after 24 h fermentation, utilizing 14.29% of the total diluted substances. The uptake of total sugars was 85.75% from the total diluted substances in the juice medium and 78.91% in the molasses medium. The chemical composition of the distillate from the fermented juice medium meets the fuel ethanol standards.
