The main purpose of the presented research is the comparison of the content of water, protein, carbohydrate and essential oil in the roots and fruits of lovage (Levisticum officinale Koch.). The essential oil was determined by three various methods: I - immediate distillation with water vapourcond, II - distillation with water vapour and with m-xylene, III - distillation with water vapour, m-xylene, and 20 percent solution of sulphuric acid. Both qualitative and quantitative content of essential oil was determined by GC/MS method, according to previously described methodology. The major components of the essential oil obtained from the lovage roots are phtalides (cis-ligustilide). However, the main components of the essential oil obtained from the lovage fruits are the monocyclic terpenes (alpha-arid i beta-phellandrene)
