[New functional-purpose fruit and vegetable products]

The follow new range items of functional-purpose fruit and vegetable preserves (FVP), which have been also developed under business order, are presented: 1. Preventive and clinical FVP, destined for atherosclerosis, cardiovascular diseases and pancreatic diabetes prophylaxis, containing supplements: fiber, vitamins, lactoserum. 2. Dessert and fruit and vegetable beverages on the base of apple, berries, pumpkin, sea buckthorn, carrot and other feedstock. The follow therapy supplements were used: antioxidants, potassium citrate, bran, gelling agents, stabilizers. These items are recommended to be under clinical trials of dietary intake of people with carbohydrate and lipid pathometabolism. 3. Garlic paste and garlic syrup with anticarcinogenic characteristic are developed. Specific processing methods eliminate spicy garlic taste and flavor, the items include in the composition of dairy consumed products (low-fat mayonnaise, vegetable dressing, bread, curds and so on). 4. Fruit and vegetable instant powders to be applied as reduced juice and plant raw and also as supplement for confectionery, meat and milk products, including for child dietary. 5. FVP on the base of soybeans, kidney beans, peas and dried peas, which have protein and carbohydrate balanced composition. These items are already produced by some FVP factories. 6. Vegetable meat preserves for specific contigent. 7. The technology of beet and carrot food and flavor adjunct production is under development. Normative and technical documentation for the FVP names is developed for the points 3, 5 and 6. All the researches are carried out by All-Russia Research and Development Instit. of Canning and Vegetable Drying Industry, the point 6 to be together with All-Russia Research and Development Instit. of Food Concentrate Industry and Special-Purpose Food Technology.
