Microstructural changes of muscular tissue of quail during autolysis was under study. Pectoral muscles (PM) and thigh muscular tissue (TM) gained after dressing and boning of quails were explored. Typical methods of histologic specimen preparation were used. It was marked that TM structure did not differ from PM structure, but it was more consistent. Postmortem changes of TM progressed more intensively than those of PM. The main changes were fixed in the specimen prepared after 4 hours after slaughtering. The amplification of karyolitic processes and inequality of oxyphilous color were observed. Those processes conducted with compaction of muscular tissue and decondesation of connective tissue elements. It was proved that autolysis process speed in quail meat quite differed from the same speed of other kind meat (beef, pork, mutton) and also was 2 or 3 times higher than the same speed in chicken meat. Small differs in PM and TM structures are connected wth the character of their motion activity during life. The findings allow to conclude that some technological stages of quail processing can be reduced that will have big economical advantages in projecting meat processing complexes that will use this kind of feedstock.
