[Multipurpose assessment of organic forms of essential trace elements: zinc, copper, manganese, chromium in vitro and in vivo experiments]

New food source of essential trace elements in organic form as complexes with enzymatic hydrolysates of some food proteins are received. Whole cow's milk and cow's milk whey were treated by pancreatine and soybean protein isolates and egg's albumen were processed treated by flavoenzyme. Ultrafiltration in tangential stream was carried out after enzymatic hydrolysis (a membrane 10 BDa). Ultrafiltrate was incubated with water solutions of copper, zinc, manganese and chrome chlorides (pH=7,1, temperature 20 deg C.). The complexes of essential trace elements with enzymatic protein hydrolysates were received after nanofiltration and lyophilic drying. The content of essential elements in the structure of complexes varied a little subject to a kind of hydrolysate, but in all cases it remained sufficiently high. Safety of complexes for food enrichment is confirmed by acute toxicity experiments (on rats). Children suffering from intolerance to some proteins had practically no LgG-antibodies to these complexes. That confirmed the absence of sensitizing actions in the complexes. Microelement premix addition to animal forage did not cause increase of allergic responsiveness. It is recommended to lead a clinical approbation of the received complexes in the structure of specialized foods, including prophylactic and clinical nutrition.
