Objective sensory analysis of visual characteristics of pasta enables the estimation of pasta acceptability by consumers using a statistical model devived using linear multiple regression analysis. The paper displays the results of sensory evaluation performed on 9 spaghetty samples that were evaluated by panel scoring and deals with the significance of obtained score to evaluate the visual appearance of pasta that is the closest to the consumers opinion.
