Some physical and chemical characteristics of Turkey oak seed oil (Quercus cerris L.)

The results obtained from the investigations on oil extracted from Turkey oak seed (Quercus cerris L.) are shown in this paper. Using standard JUS ISO methods, some physical and chemical parameters which characterize oil quality were determined in the extracted oil. The values obtained are approximately equal to ones for oils of similar composition. The composition of fatty acids determined using GLC method and the most represented of them, oleic, linolic and palmitic acids made 94.89% of the total fatty acids. The content of unsaturated and saturated fatty acids was 79.34% and 20.66%, respectively. Regarding the content of fatty acids, Turkey oak seed oil is the most similar to avocado and peanut oil. Turkey oak seed oil is very interesting for the possible use in cosmetic and pharmaceutical industry.
