Quality of carcasses and M. semimembranosus of two- and four-breed cross pigs

Carcass and meat quality were investigated in Large White x Swedish Landrace and Swedish Landrace x Large White two-breed crosses, and (Durok x Pietren) x (Large White x Swedish Landrace) and (Durok x Pietren) x (Swedish Landrace x Large White) four-breed crosses, using the comparative method. After the analysis of the obtained results, it was concluded that there is a significant linear correlation between the average meat yield in carcasses of the investigated crosses determined by partial dissection and Piglog 105 device, as well as between meat yield determined by partial dissection and FOM device. According to the results, there is a poor linear correlation between the values obtained by partial dissection and according to the Rulebook. Both devices used, Piglog 105 and FOM, are very suitable and necessary for carcass quality evaluation in vivo and on slaughter line. Using the investigated crossbreeding model, fattening pigs with increased meat yield were obtained, especially in four-breed crosses (58.4% and 56.0%), however with somewhat lower meat quality (RSE quality on the average).
