Chemical composition and mineral elements in milk from sheep of the Srednostaroplaninska breed

The study was conducted during the period from April to July with raw sheep milk from the region of the Central Balkan Mountains. The milk was obtained from 5 sheep of the Srednostaroplaninska breed reared at IMSA, Troyan. The chemical composition of the milk was determined on Milko-skan 133B and that of ash, by weight. Trace and macro elements were determined after dry ashing of the samples, their mineralization in a muffle at 550С and preparation of a salt-acid solution from the ash. The K and Na content was determined on Flamom-B, P by the molybdate-vanadium method and that of the other elements on “Perkin-Elmer” 380. It was found that with the changes in the individual milk yield per sheep during the lactation period, substantial variation occurred in its chemical composition, by following the typical curves of an increase in all characteristics and a decrease in lactose. The calcium/phosphorus ratio was from 1.43 (April) to 1.53 (July) and the potassium/sodium one from 2.42 (June) to 2.56 (May). After alpine rearing of sheep on a high-mountain pasture (June) the content of Mg, Fe, Zn and Mn increased and that of potassium decreased. At the end of the lactation period the content of all trace and macro elements had higher values.
