How to use the NIR spectroscopy in a brewery laboratory

The NIR spectroscopy enables to forecast important qualitative indicators of raw materials as well as intermediate products during beer production. We focused on malt extract, malt proteins, soluble nitrogen in congress wort, relative extract at 45 deg C and Kolbach index. The spectra in the NIR range were measured by the multi-purpose analyser (Bruker Optics) with installed OPUS 5.5 chemometric software for the calculation of mathematical calibration models. The models were verified by internal and external validations. The NIR spectroscopy represents a suitable method especially in cases where a high number of real-time analyses without long delays between samplings and results are required.
