Effects of different cultural and storage conditions on taste and nutrition of mini-tomato [Lycopersicon esculentum] fruit

Effects of storage conditions on fruit quality of mini-tomato, which was grown on soils supplemented with organic-fertilizers, were investigated. Harvested fruit were bagged with plastic bag or non-bagged and stored at room temperature or in vegetable cabinet of refrigerator. Fruit weight loss was smaller in the refrigerator than room temperature. Brix reached a peak two days after harvest at room temperature but five days after harvest in the refrigerator. Vitamin C content peaked two days after harvest. No conspicuous difference was found in the content fluctuation among storage conditions. A panel taste test was conducted between fruit grown on soil supplemented with only organic fertilizers and with conventional chemical fertilizers. The sweetness evaluation one and two days after harvest was greater in fruit with organic fertilizers than chemical fertilizers. There was no or little difference in the evaluation of sourness, color or flavor.
