The aim of the Ph.D. paper is to research the significance of the activity processes and professional administration in catering businesses through identifying the main problems and possible solutions. In order to achieve the aim, following tasks were carried out: the functions and features of catering businesses were researched, their theoretical development and formation aspects were collected; the documents' base of determinants of catering businesses' activities and institutional system of monitoring were classified; economical capacity of catering businesses and development's indicators were evaluated; activity processes' influencing factors were analyzed; suitable solutions for management of activity processes were discovered and proposed.
