The nitrate and heavy metals content of carrot and parsley from an ecological and a conventional plantation was studied. The roots of both vegetables were divided into skin and pulp. The aim of this study was to compare the degree of contamination in carrot and parsley roots obtained from ecological and conventional plantations, and to determine the distribution of these contaminants in different parts of vegetables.
