The influence of storage on isothiocyanates in horseradish roots and processed horseradish was studied. Content of isothiocyanates in horseradish depends on root diameter. The higher root diameter the lower content of isothiocyanates was found in horseradish grown in Poland. After two months of storage at 0 deg C the content of isothiocyanates in horseradish was lower by about 20 percent compared to fresh roots, while in processed horseradish stored at 10 and 20 deg C the concentration of isothiocyanates was lower by about 50 percent
