The paper deals with the production and consumption of beet worldwide and in Slovenia. It describes development in supply and culinary preparation of beef in the last decades. The emphasis is given to the necessity of ageing process for the contemporary and quick preparation of beef. Ageing process and different preparation methods are descibed.
