The vitamin folate enables cell division and tissue growth. Folate is found only small amounts in wheat, and in higher levels in a variety of fruits, vegetables, and legumes. Folic acid is a synthetic form of folate which is used by body than natural folates. Many governmens, private industry, and in some cases individual companies have adapted some form of wheat flour based fortification program. Fortification is most easily done in roller mills, which have a daily capacity above 20-50 metric tons. However, many countries in the world have both a modern wheat milling sector with a capacity above these levels and a traditional milling cottage industry which mills at a smaller capacity.
