[On physical properties of extracts of Acanthophyllum gypsoohiloides and Saponaria officinalis used for manufacturing functional purpose-products]

Gypsophilous spinepink (Acanthophyllum gypsoohiloides) and soapwort (Saponaria officinalis) were selected as raw materials to produce saponin-containing emulsifiers used in the production of emulsifying products of functional purpose. The technology of manufacturing extract emulsifiers (RE) from plant roots is based on the method of preparing a soap root decoction used as a foam-former in the production of halvah. The chemical composition of water RE of gypsophilous spinepink and soapwort placing a special emphasis on saponins responsiblw for emulsifying properties of RE, phenol compounds (perspective antioxidants) and polysaccharides influencing the RE viscosity. The maim components of RE are saponins: the total content in water spinepink RE was 83%, and in soapwort RE – 72%; RE differed in the ratio of saponins of different polarity – in spinepink RE most saponins were mainly represented by highly-polar saponins (77%), while in soapwort RE, besides highly-polar saponins (55%), lowly-polar saponins were present (17%). The physical properties of spinepink RE and soapwort RE influencing greatly the dispersion process, as well as the properties and stability of the obtained emulsions were studied: the isotherms of boundary tension and viscosity were determined, the RE foam-forming and emulsifying abilities were studied. Both of RE had high surface activity – up to 55-60 H/m2, the abrupt declining the boundary tension being observed in the area of starting concentrations (0.8-1.2%); changing the viscosity was observed with the weight fraction of dry matters in RE1%, however the viscosity changing rate in soapwort RE was higher compared to spinepink RE because of high polysaccharides (15%). Spinepink RE and soapwort RE had the same emulsifying ability and were able of forming stable emulsions with the same weight fraction of soluble dry matters.
