Ways of reception of an extract grape and opportunities of its use in the food-processing industry

The possibility of superhigh frequency (SHF) apparatus is studied for extraction (EX) of flavonoid glycosides (FG) from grape pomace (GP). A mathematical model is developed which allows to optimize parameters of SHF treatment by output of FG from GP: a specific power is 1 600-1700 Wt/kg; a step interval is 1,5-2 minutes; heating step number is 7; a total time period of EX is 12-14 minutes; a temperature of EX is 65-68 deg C; a hydromodule is 1:5. EX intensification allows to decrease alcohol content up to 40% due to SHF. The advantages of SHF (in compare with EX by ultra sound) are process time decrease at the same dietary supplement output and receiving of an extract with low content of ballast substances (chlorophyll, resins). Chemical composition of GP extract is studied; it is shown that the extract received by SHF- EX has a lot of dietary supplements, including FG (mainly flavons and flavonols). Hypolipidemic properties of GP-extract are tested with laboratory animals (white rats, males). They have received the extract as a feed additive. It is shown that GP-extract is low-toxic and it can increase detoxication liver function, decrease triglyceride, cholestirin and beta-lipoproteid numbers at hyperlipedemia. A technology of bakery production is developing with use of GP-extract. Their intake will decrease lipid load on organisms of humans predisposed to fatness and atherosclerosis
