Studies of shell of acclimatized red king crab at different molting stages as a source of chitin and protein products [addition into fish rations]

With the purpose of studying the dynamics of changes in physical and chemical characteristics of the chitin-protein complex and chitin of acclimatized red king crab at its different moulting stages we tried to define the main biochemical characteristics of shell producing an effect upon the process of obtaining chitin with reproducible characteristics. Our studies have shown that for the industrial production of chitin and chitosan, the shell of crab at the 2nd and 3rd moulting stages, as well as the cast shell attracts the most scientific interest. Our data also confirm high biological value of the peptide complex due to a considerable content of proteins, peptides and available mineral substances, lipids. The results suggest that the peptide complex may be recommended as a component in feeds for cultivated crustaceans and fish
