Comparison of breed and the effect of growth intensity on carcass quality of young bulls in Slovenia | Primerjava pasem in vpliv intenzivnosti rasti na klavno kakovost mladih bikov v Sloveniji

Data on carcass quality for young bulls (age up to 24 months) slaughtered in Slovenian abattoirs over two years period were analyzed. Subject of the analysis were bulls of Brown (RJ), Simmental (LS) and Holstein (CB) breed and their crosses with meat (M) breeds (RJ×M, LS×M in CB×M). Analyzed traits were slaughter age, warm carcass weight, EUROP conformation and fatness grades, carcass weight adjusted for classification grade and net daily gain (of carcass weight). Results show 35% of LS bulls graded in U and over 50% in R, more than in RJ (40% R, 55% O) or CB bulls (10% R, 70% O, 20% P); differences between LS bulls and meat crosses were small. Regarding the fatness, differences among breeds and crosses were minor; the majority of bulls (95%) had grades 2 and 3. In Slovenian conditions, the best results were observed for LS bulls. They were heavier and had 76 g/day higher net daily gain than CB or RJ bulls. They had better conformation than RJ or CB bulls (0.9 and 1.4 grade point, respectively). Results of meat crosses (RJ×M, LS×M, CB×M) approached those of LS bulls; due to lower carcass weight, LS×M crosses showed no advantage compared to LS bulls. In Slovenian conditions, the average growth intensity is low (net daily gain 560 g/day). Strong relationship between classification results and growth intensity suggests that in Slovenian conditions better carcass quality could be achieved with improvement of growth intensity.
