Protein changes in meat in the result of violation of transportation and preservation terms.

Properly organized slaughtering and veterinary control is of key importance in obtaining high-quality products of animal origin. This article was aimed at studying the meat material intended for consumption and the terms of transportation and preservation of which were violated. Based on the results of the study it can be concluded that such complex and negative changes in meat which not only decrease its nutrition value, caloric content and quality but also they can be a source of toxicoses.
