Physicochemical composition of m. Longissimus dorsi is studied in calves of Brown хLimousin and Black and White х Limousin crossbreeds. The animals of the two types of crossbreeds are devided in two groups as the one is rearead on pasture while the animals from the other group were reared on pasture and during the last three months before slaughter they were finished indoors, fed concentrate and forage. In order to study the physicochemical composition the following traits are determined: pH24 post mortem, colour - R/525nm, water holding capacity, myoglobin, fat and protein content, as well as that of the moisture and ash. No significant differences between groups of the two crossbreeds are found in pH24, colour and water holding capacity. The way of rearing has significant influence on the intramuscular fat content in Brown х Limousin, which is lower in the pastured animals - P0.001. Pasture rearing and indoor finishing do not affect significantly the protein content, moisture and ash percentage in the two types of crossbreeds.
