In this study, the impact of extraction conditions on polyphenolic contents and their antioxidant activity in berry seed, skin and pulp of grape variety Vranac was examined in order to perform optimization of extraction conditions and obtaining a high polyphenolic content in extracts. Using spectrophotometric methods of analysis it was determined that the highest value got for a particular group of phenolic compouds, such as total phenols, hydrocinnamoyl tartaric acid esters, flavonoids and anthocyanins if is used a extraction mixture of solvents: methanol and acetone, in certain relations. Based on these results it can be concluded that the concentration of polyphenolic compounds and their antioxidant activity of analyzed extracts of grape, among other reasons (soil composition, climate, apply a protective means), depend on extraction conditions.
