High yields are generally obtained by excessive nitrogen fertilization, which induces an increase in nitrate content in edible parts of spinach. Such spinach, when consumed, becomes as source of harmful nitrates in the human organism causing carcinogenic diseases. The above facts were used to establish the objective of the paper, which was to determine the effect of different types of nitrogen fertilizers (CAN and urea) and application rates (50, 100 and 200 kg N/ha) on spinach yield and nitrate accumulation in spinach leaves. Field trials were conducted during the spring growing cycles in 2007 and 2008 on vertisol involving the Marisca hybrid. The obtained results showed that the nitrate content was lowest in the control variant (176 mg/kg); moreover, the highest nitrogen rate applied through CAN gave 1,456 mg nitrate/kg and the application of 200 kg N/ha through urea resulted in 504 mg nitrate/kg spinach.
