There has been developed a complex system to provide quality and safety control of meat and meat products at all production and marketing stages. It is based on barrier technologies, predicting microbiology and finding critical control points (CCP) of accumulating toxic compounds in organs and tissues of farm animals reared at areas with high anthropogenic load. Monitoring was performed at farms specialized in meat production. The anthropogenic load was determined by analyzing ecological maps, contamination data of soil, water and plant feeds. Social and hygienic evaluation was carried out by detecting a correlation relationship of habitat factors and population health. Based on the study of accumulation of toxic residues in organs and tissues of slaughter animals CCP were found in pigs (leaf lard, liver, kidneys). Recommendations to use such meat raw materials were developed in accordance with the proposed algorithm. Animal carcasses should be properly depleted. Mechanical removal of critical organs and tissues helps to decrease the content of heavy metals to the maximum allowable level. If required, contaminated raw material could be mixed with pure one in an amount of at least 15%. It is concluded that complex monitoring and building up a database of toxic residues during rearing and slaughter of farm animals will allow to produce raw materials of stsble quality and provide safety of finished products
