During the period of 2005-2008 in Zhrebino village South-east Bulgaria a field experiment was researched. The experiment was applied in block design with 4 replications and 15 m2 plot size for estimation the influence of different predecessors sunflower, stubble, coriander and sorghum and the rate of nitrogen fertilization 0, 80, 120 и 160 kg/ha on the grain quality of the common winter wheat variety Prelom. The growing of plants was performed in compliance with the standard technology. The results show that the tested rates of fertilization and predecessors had considerable effect on the physical and technological properties of the grain. The investigated characters had maximum values after predecessor coriander and lowest – after sorghum. The highest thousand grain weight was obtained at the N120P80 fertilized variant and with further increase of nitrogen quantity the values of that characteristic decreased. The highest test weight were reported at without fertilization and with increase of nitrogen quantity the values of this index decreased. Increasing the quantity of nitrogen fertilizer up to 160 kg/ha the vitreousness, the wet and dry gluten increased. The maximum protein content was recorded at the N120P80, fertilized variant, while with further increase of nitrogen quantity the grain protein content decreased.
