The study was conducted with individual milk samples taken every month during the milking period from 5 sheep of Srednostaroplaninska breed raised in the conditions of the Central Balkan Mountains. Extraction of fat from the milk samples was performed by the method of Röse-Gottlieb. The fatty acid composition was determined by a gas chromatograph with a flame-ionization detector and a column. It was found that during the study the fatty acids of sheep milk showed different tendencies in the concentration during lactation. The total quantity of saturated fatty acids, including the myristic one, in the milk of the studied sheep had comparatively high concentrations during the whole period of milking – from 70.38 tо 71.40%, including 9.09-12.09% of myristic acid. The content of polyunsaturated fatty acids in the sheep milk was low – it increased during the period of active sward from 4,12% in April to 4,85% in June, whereas the monounsaturated fatty acids, represented mainly by oleic acid, had the following values during the period - 24.8-25.5% respectively. The sum of short-chain fatty acids was the highest in milk produced in April and May, that of the medium-chain ones in June and July, whereas the long-chain ones had close values during the whole milking period.
