In the conditions of the Republic of Belarus there were analyzed the investigation results of the chemical composition of the guelder-rose berries (Viburnum L.) of different varieties. The following indexes have been studied: mass fraction of the general and dissolved solid, titrate acids, sugars, polyphenol compound content, vitamin C, mineral substances, etc. It has been estimated that the studied varieties of guelder-rose possess a rich chemical composition which allows to state their high nutritive and biological value as well as their antioxidant properties. Depending on guelder-rose variety the dry solids content ranges from 10.28% to 12.27%; total sugar content - from 6.82% to 7.24%; reducing sugar content - from 6.33% to 6.82%; titrate acids content - from 0.78% to 1.45%; vitamin C content - from 14.32 to 56.75 mg/100 g; polyphenol compound content - from 210 to 315 mg/100 g; pectin content - from 0.78% to 0.91%; roughage content - from 0.67% to 1.10%; beta-carotene content - from 0.46 to 0.58 mg/100 g; mineral substances content - from 1.18% to 1.24%; protein compounds content - from 0.18% to 1.22%. There have been evaluated antioxidant properties of direct pressing juice obtained from the berries of different varieties. Analysis of the obtained data indicates high antioxidant activity of first pressing juice obtained from the berries of different varieties. The index identifying the antioxidant activity of the studied juices ranges from 191 to 218 mV. It has been identified that all studied varieties of guelder-rose can be recommended for juice production of prevention assortment, but varieties Ulgen, Kievskaya Sadovaya and Pamayti Valentiny can be the best ones.
