Characteristics of aromatic components and flavoring styles evaluation of Sanmenxia flue-cured tobacco | 三门峡优质烤烟中性香气物质的特点及香型风格评价

Chinese. 以三门峡烟区31份烤烟样品为材料,分析了三门峡烤烟中性香气物质特点,同时与国内外优质烤烟进行差异性分析,并对三门峡烤烟的香型风格进行评价,结果表明：（1）三门峡烤烟的中性香气物质含量主要表现类胡萝卜素降解产物〉类西柏烷降解产物〉美拉德反应产物〉苯丙氨酸类降解产物;（2）三门峡烤烟的各类香气物质含量介于于巴西、津巴布韦、许漯平（河南省许昌、漯河、平顶山烟区）和云南之间,并且烤烟各类香气物质在不同产地间的差异均达到了显著水平;（3）三门峡烤烟的醇和度和透发性较好,香味底韵和吸味优于云南烤烟,香型介于巴西烤烟、津巴布韦烤烟、许漯平烤烟和云南烤烟之间,定义为浓香型.[著者文摘]

English. 31 samples of Sanmenxia were used as materials to analyze the characteristics of neutral aroma materials and to find out the difference of neutral aroma materials between Sanmenxia tobacco and high quality flue-cured tobacco home and abroad;Evaluation of the odor type of Sanmenxia flue-cured tobacco was also conducted.The results showed that：（1）the content of the neutral aroma componets of Sanmenxia flue-cured tobacco displayed the products degrated by carotene the products degrated by cembrane maillard reaction productsthe products degrated by phenylalanine;（2） the content of different kinds of aroma components in Sanmenxia flue-cured tobacco were between that in Brazil,Zimbabwe,Xuchang,Luohe,Pingdingshan and Yunnan,aroma materials in flue-cured tobacco leaves had significant difference among different tobacco-grown areas,and the different kinds of aroma components had siginificant difference among different planting areas.（3） The mellow level and volatility of flue-cured tobacco leaves in Sanmenxia were better,the smell background and smoking quality were better than those of Yunnan tobacco leaves,the aroma style of tobacco leaves was between that of Brazil,Zimbabwe,Xuchang,Luohe,Pingdingshan,and Yunnan,which can be defined as strong aroma style.[著者文摘]
