The effect of sex and fattening system on the quality of organically produced calf meat was studied. For that purpose, feed supplemented with either soya flour or a mixture of peas and carob beans was used at the end of the fattening period. Slaughter weights were 550 and 455 kg for males and females, respectively. Analyses were performed on loins after 10 days of ageing. Non-significant differences in pH, water holding capacity, or in the vitamin E content were observed. However, meat from females showed higher values of intramuscular fat, moisture and colour brightness (L*) than those from males. In addition, lower Warner-Bratzler shear force was observed in meat from female calves. Regarding the fatty acid profile, the higher monounsaturated fatty acid proportion was observed in meat from females, whereas the higher proportion of polyunsaturated fatty acids was found in meat from males.
