The aim of the study was to determine the effect of muscle, physiological age and type of breed in total and insoluble collagen content of entire young bulls. A database has been created by INRA with data obtained in 11 experiments of young bulls. The data were obtained from different muscles (Longissimus, Semitendinosus and Triceps brachii) and breeds (beef breeds: Charolais and Limousin; non-beef breeds: Aubrac and Salers). Meta-analyses were used to determine the effects of the factors cited in total and insoluble collagen content. Concerning muscle effect, Longissimus muscle contained lower total and insoluble collagen contents than Semitendinosus and Triceps brachii muscles. Moreover, total collagen content showed a quadratic evolution with physiological age in the three muscles. The evolution in Longissimus and Semitendinosus was similar but there was a delay in the Triceps brachii muscle. The type of breed had effect on total and insoluble collagen content in the three muscles but to a minor extent than muscle effect. Total and insoluble collagen content showed a cubic, quadratic and linear relationship with physiological age in Longissimus, Semitendinosus and Triceps brachii muscles, respectively.
