Cachena cattle breed present in the mountain areas of the northwest of Portugal is a breed of high hardiness and small size. For the purpose of this study, 989 carcasses of Cachena breed slaughtered in 2007 and 2008 used and classified in A. uncastrated young male animals of less than two years of age; B. other uncastrated male animals; C. castrated male animals; D. female animals that have calved; E. other female animals, according to the (EC) Reg 183/2006 and in veal (V) and Beef (Z) (EC) Reg 700/2007. The most important categories in terms of production are young animals over 6 months (LO), uncastrated young male, veal and beef, corresponding to young animals. The effect of sex in the carcass weight and age of the veal and beef were evaluated with a ANOVA using SPPS version 15. Carcass weight was 75,2+/-16,15 kg, for a slaughter age of 5,35+/-1,14 months for Veal (V) and 98,6+/-21,26 kg for a slaughter age of 9,4+/-1,26 months for beef (Z) categories. In both categories males have higher weights when compared to females. Females are slaughtered in a smaller number for raising heifer purposes. The carcasses present light weights due to the reduced breed size and extensive production system in mountain areas.
