This study aims to contribute to the qualitative characterization and possible recovery of the edible components of the 5th quarter. Eighty animals aged between 8 and 10 months, from different herds of Mirandesa cattle were divided into 3 groups (A - body weight (BW) between 114 and 221 kg; B - PV between 222 and 261 kg and C - PV between 262 and 393 kg). Records have been collected for body weight (PV), carcass weight (PC), Gut weight (VB) (feet and tripe) and offal or internal organs (VR) (tongue, liver, kidney, lung and heart). In each group 3 samples were selected as representative of the 3 groups to proceed to the following tests: total protein (TP), total fat (GT and profile of fatty acids. It was observed a significant increase in yield with increasing slaughter weight. The protein and fat content of organs are generally according with the values cited in the literature. Results confirmed the high percentage of oleic acid on the tongue (4.9 - 13.1%), legs (3,4 - 7.7%) and heart around 3%.
